ORIGIN
Cañada La Torre plot is situated in the western of Valencia between Fuenterrobles and Utiel at 1090 meters of altitude.
Silty sandy soil. 27-year-old Cordon Royat trained Malvasia vines on trellis. 2 Ha rectangular plot with a trough in the center surrounded by almond and holm oak trees.
GRAPE VARIETY
WINEMAKING
Malvasía from organically grown vines. Harvested with the first sunlight of the day on the 14th of September of 2021 in 15kg cases.
Cultivation and production with minimum intervention, seeking to reflect all the terroir potential. 12-hour cold maceration precedes a gentle press. Natural yeast fermentation at 18ºC for 20 days. Wine is protected from malolactic fermentation in stainless steel vats where it’s kept on its lees for 6 months, with a 2-week stirring. Transfer to 5,000-litre French oak Foudre for 4 months before bottling in September 2021.

The climate is continental, influenced by the Mediterranean. The average annual temperature is 14°C, with a temperature range of more than 17°C. The winters are long and cold; the summer is relatively short; autumn is short and temperatures undergo a sharp decline. Precipitation is 541 mm per year.
