Winemaking

El Roble is made from 100% Tinta Fina grapes harvested at their optimal ripeness. In the winery, the bunches are sorted and gently destemmed to preserve the fruit’s purity. Cold maceration for 48 hours awakens the freshest aromatic compounds, followed by a 7-day fermentation at 24–26 ºC in 17,000 L truncated conical tanks. Malolactic fermentation, carried out on the lees with gentle bâtonnage, adds volume and a silky texture.

Finally, the wine rests for 6 months in French oak barrels, enough to hint at the wood without taking away the fruity essence that makes it so tempting.

Perfect with grilled meats, Iberian ham, rich pasta dishes, and aged cheeses. Its balance of freshness and body makes it a versatile companion for casual dinners or moments when pleasure is the priority.
