Winemaking

A selection is made of the Macabeo and Chardonnay grapes, grown in accordance with the rules of Organic Farming. This form of organic viticulture and winemaking is based on the development of environment and consumer friendly technologies for organic wine quality improvement and scientifically based legislative framework (using only natural resources, without any chemicals, in this way producing organic fruit while at the same time conserving the fertility of the land and respecting the environment). The grapes are picked at the beginning of September. Cold maceration in a pneumatic press. Fermentation at 14ºC in stainless steel tanks. In January we add the ‘liqueur de tirage’, to provoke a second fermentation in bottle. The Cava is stored in ‘rima’, or horizontally, for a minimum of eleven months.

Serving Suggestions

This brut cava is ideal as a refreshing aperitif, a pairing for light starters, seafood or sushi or a great match for light desserts, such as fresh fruit or almond cakes. Serve well chilled, between 4 and 6ºC, to enhance its freshness, fine bubbles, and aromatic complexity.

Creamy, persistent mousse with fine, well-integrated bubbles, the result of a carefully controlled second fermentation and perfectly balanced ageing on lees. Bright straw yellow with golden highlights, clean and luminous, reflecting youth and elegance. Clean and expressive nose of medium-high intensity, opening with fresh citrus notes (lemon, grapefruit) and white fruits (green apple, conference pear). As it evolves, it reveals subtle hints of dried nuts (hazelnut, walnut) and fine patisserie notes (sponge cake, brioche) contributed by lees ageing. On the palate, it is lively, fresh, and well- alanced, with a pleasantly dry entry and creamy, rounded mouthfeel. The well integrated acidity provides structure and length, leading to an elegant finish with citrus and floral hints (orange blossom). A long, refined aftertaste makes this cava both versatile and sophisticated.
