ORIGIN
The vineyards are located within the Alicante PDO, on Spain’s eastern coast, where Mediterranean warmth meets the continental influence of the inland mountain ranges. This climate diversity favors slow and complete ripening, essential for the proper phenolic development of Petit Verdot, a late-ripening variety. Soils are predominantly sandy-loam with limestone presence, contributing to the wine’s structure and aging potential.

WINEMAKING
Manual selection of the best Petit Verdot parcels at optimal phenolic ripeness. Cold prefermentative maceration is carried out for 10 days at 14ºC to extract aromatic compounds and smooth polyphenols .Alcoholic fermentation then takes place at 26ºC for 5 days, with gentle daily pump-overs to optimize extraction. Afterward, malolactic fermentation is conducted in stainless steel tanks, enhancing roundness and overall balance.

SERVING SUGGESTIONS
Audentia Petit Verdot is a characterful wine, ideal to pair with game meats (rabbit, wild boar, venison), rice dishes and aged cheeses made from goat or sheep’s milk. Serve at cellar temperature (16–18ºC). Avoid higher serving temperatures, as they may accentuate the alcohol and mask its aromatic balance.
