Region: Denominación de Origen Cava (Requena). Continental climate influenced by the Mediterranean. Large day/night temperature variation. Average annual temperature: 13ºC. Chalk/clay soils.

Winemaking: The Chardonnay grapes are harvested at the end of August. Cold maceration in a pneumatic press. Fermentation at 14ºC in stainless steel tanks. In January a process called ‘tiraje’ occurs where the new wine is bottled and the second fermentation occurs in the bottle at a temperature of 16ºC. The Cava is stored in ‘rima’, special containers for holding the bottles in position, for 12 months.

Serving Suggestions: Ideal as an aperitif, to accompany main courses and desserts that are not too sweet. Serve very chilled between 4 and 6ºC.

Tasting Note
Appearance Thick mousse of fine, well integrated bubbles.
Colour Pale, golden yellow.
Aroma Light aromas of yeast, butter and fresh citrus fruits.
Taste Creamy texture, with the bubbles well integrated, complex yet well balanced acidity and freshness.
