Region: Denominación de Origen Cava (Requena). Continental climate influenced by the Mediterranean. Large day/night temperature variation. Average annual temperature: 13ºC. Chalk/clay soils.
Winemaking: The Chardonnay grapes are harvested at the end of August. Cold maceration in a pneumatic press. Fermentation at 14ºC in stainless steel tanks. In January a process called ‘tiraje’ occurs where the new wine is bottled and the second fermentation occurs in the bottle at a temperature of 16ºC. The Cava is stored in ‘rima’, special containers for holding the bottles in position, for 12 months.
Serving Suggestions: Ideal as an aperitif, to accompany main courses and desserts that are not too sweet. Serve very chilled between 4 and 6ºC.
